What I Learnt Today - Peanut Butter Cookies



My husband loves smooth peanut butter. So I had a little poke around the internet and found a smooth peanut butter cookie recipe. Strangely, it also tells you to add chopped peanuts - so why you don't just used crunchy peanut butter in the first place - I have no idea.

But then I got to thinking, would he prefer them with chunks of nut? And..oooh what about chocolate? They'd be just like snickers!

So, I made plain peanut butter, peanut butter with mixed nut, and peanut butter with mixed nuts and chocolate. Phew! Here's what I did:

To make 24 cookies you need: 50g unsalted butter (+extra for greasing), 45g smooth peanut butter, 50g caster sugar, 45g light brown sugar, 1 medium egg (beaten), 110g self raising flour, 50g mixed nuts (optional) 50g chocolate chips (optional)

Set the oven at gas mark 4. Add butter, peanut butter brown and caster sugar to a bowl and mix together until smooth. 




Then mix in the egg


 Then the flour (and nuts and chocolate if you like)



Roll into approx 24 balls about the size of walnuts, and put onto a greased baking sheet. Space evenly as they at least double in size. 



Press them down slightly with a fork, to create a slight pattern


Bake for 15 - 20 minutes depending on how soft or crunchy you like your cookies.



I'll let you know which ones he prefers!

  1. Ahh these remind me of the snickers cakes I made a while back, it was snickers bars and lots of peanut butter in the mix!

  2. I love peanut butter cookies!!! I like to dip my fork in sugar before I press it into the cookies. Adds a little more sweetness and sparkle. These look so good! I am a new follower.

  3. Great tip - thank you! The verdict is in, and he liked the plain and the choc and nut, but not the just nut. I guess I'll have to eat those ones! :)
